* 2 boneless chicken thighs
* 2 eggs
* 1/2 cup almond meal
* 1/4 cup almond flour
* 1/2 tsp salt & pepper
* 1/2 tsp garlic powder
* 1/2 tsp chili powder
* 1/2 tsp paprika
* 1/4 tsp cayenne pepper
* ghee
* 2 @birchbenders Paleo Waffles
Heat ghee in a skillet over medium heat. Beat two eggs in a bowl and then make breading by combining flours and spices in a separate bowl. Coat the chicken in the eggs, then the breading mixture and place carefully in the hot skillet. Cook for about 5 minutes each side or until the chicken is crispy and cooked through. Place chicken on top of toasted waffles.
"bluebanero" maple syrup:
* maple syrup
* habanero sauce
* fresh or frozen bloobs
* bluebanero jelly from the farmers market (made with fresh blueberries, sugar, vinegar, pectin, and habanero peppers)
Combine ingredients together and heat in microwave for 45 seconds. Drizzle bluebanero sauce over chicken and enjoy! Makes 2 servings!
